Ingredients

Scale
  • 3 very ripe bananas, mashed
  • 1/2 cup (113g) unsalted butter, browned and cooled
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) semi-sweet or dark chocolate chips

Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts, then foams and turns golden brown with a nutty aroma. Remove from heat and let cool for 10-15 minutes until warm but not hot.
  2. Prep the bananas and wet ingredients: In a large bowl, mash 3 very ripe bananas until mostly smooth with a few small lumps. Add cooled brown butter, 3/4 cup granulated sugar, 1/4 cup brown sugar, 2 large eggs, and 1 teaspoon vanilla extract. Mix gently until combined.
  3. Mix dry ingredients: In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt evenly.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet banana mixture. Stir carefully with a spatula until just combined—do not overmix.
  5. Add chocolate chips: Fold in 1 cup chocolate chips evenly through the batter.
  6. Prepare the pan: Line a 9×5 inch loaf pan with parchment paper, leaving some overhang for easy lifting. Pour the batter into the pan and smooth the top gently.
  7. Bake: Preheat oven to 350°F (175°C). Bake on the center rack for 55-60 minutes. Check doneness by inserting a toothpick in the center; it should come out with a few moist crumbs but no raw batter. Tent with foil if top browns too fast.
  8. Cool: Remove from oven and let cool in the pan on a wire rack for about 15 minutes. Lift the loaf out using parchment overhang and cool completely before slicing.

Notes

Brown the butter carefully to avoid burning; use a light-colored pan to watch the color change. Do not overmix the batter after adding flour to keep the bread tender. Use very ripe bananas for best sweetness and moisture. Tent with foil if the top browns too quickly during baking. Let the bread cool completely before slicing for cleaner cuts.
