  • 3 to 4 pounds chuck roast (well-marbled for tenderness)
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 packet (about 1 ounce) au jus gravy mix
  • 1/4 cup (57 g) unsalted butter, sliced
  • 5 to 6 banana peppers, sliced
  • Salt and pepper to taste
  • 1/2 cup (120 ml) mayonnaise
  • 2 tablespoons banana peppers, finely chopped
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • Pinch of salt
  • 12 small slider buns
  • Pickles (optional)
  • Fresh arugula or lettuce (optional)

Instructions

  1. Rinse the chuck roast and pat dry with paper towels. Season both sides lightly with salt and pepper.
  2. Place the roast in the bottom of the slow cooker. Sprinkle ranch seasoning mix and au jus gravy mix evenly over the roast. Lay sliced butter pats on top.
  3. Scatter sliced banana peppers around and over the roast. Pour about 1/2 cup (120 ml) water or beef broth into the slow cooker.
  4. Cover and cook on low for 8-9 hours or on high for 4-5 hours until meat is fall-apart tender.
  5. Remove roast and shred with two forks, discarding large chunks of fat. Return shredded beef to slow cooker and stir into juices and peppers.
  6. In a small bowl, combine mayonnaise, finely chopped banana peppers, garlic powder, lemon juice, and a pinch of salt. Whisk until smooth and creamy.
  7. Slice slider buns in half and toast lightly if desired. Spread banana pepper mayo on bottom halves, pile shredded pot roast on top, add pickles or arugula if using, and top with bun lids.

Notes

Keep the slow cooker lid on during cooking to maintain heat and tenderness. Use butter on top of the roast to keep meat moist and rich. Save cooking juices to moisten sliders or make gravy. Toast buns lightly to prevent sogginess. Banana pepper mayo can be prepared ahead and stored in the fridge for up to 3 days.
