A quick and easy slow cooker recipe featuring tender pork tenderloin in a balanced honey garlic sauce, perfect for fuss-free weeknight dinners.

  • 1.5 to 2 pounds pork tenderloin, trimmed of excess fat
  • 1/4 cup honey (60 ml)
  • 45 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce (60 ml)
  • 2 tablespoons rice vinegar (30 ml)
  • 1/4 cup water or chicken broth (60 ml)
  • 1 tablespoon olive oil or vegetable oil (15 ml)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Trim the pork tenderloin by removing any silver skin or excess fat. Pat dry with paper towels.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, red pepper flakes (if using), and water or chicken broth. Set aside.
  3. Heat olive or vegetable oil in a skillet over medium-high heat. Sear the pork tenderloin on all sides for about 2 minutes per side until golden brown.
  4. Transfer the seared pork tenderloin to the slow cooker. Pour the honey garlic sauce evenly over the pork.
  5. Cover and cook on low for 5-6 hours, or until the internal temperature reaches 145°F (63°C) and the pork is tender.
  6. Remove the pork and let it rest for 5-10 minutes to allow juices to redistribute. Slice into medallions or shred with forks if desired.
  7. Optional: Pour the slow cooker juices into a saucepan and simmer over medium heat until reduced by half for a thicker glaze.
  8. Serve the pork with the reduced sauce drizzled over it, alongside steamed rice or roasted vegetables.

Notes

Searing the pork before slow cooking is recommended for added flavor and a caramelized crust but can be skipped for convenience. Use low-sodium soy sauce to avoid over-salting. Resting the pork after cooking helps retain juices. For a thicker sauce, reduce the slow cooker juices on the stove. Leftovers keep well refrigerated for up to 4 days and can be frozen.
