This crockpot shredded chicken recipe yields tender, juicy chicken that stays moist and flavorful, perfect for easy meal prep and versatile meals like tacos, salads, and sandwiches.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil or avocado oil (optional)

Instructions

  1. Pat 2 pounds of boneless, skinless chicken breasts dry with paper towels.
  2. In a small bowl, mix 1 teaspoon each of garlic powder, onion powder, paprika, and dried thyme (or Italian seasoning), plus salt and pepper to taste.
  3. Rub the seasoning evenly all over the chicken breasts. Drizzle with 1 tablespoon olive oil to help spices stick and add moisture.
  4. Pour 1 cup of low-sodium chicken broth into the crockpot.
  5. Place the seasoned chicken breasts on top of the broth in a single layer.
  6. Cover and cook on low for 4 to 6 hours, ensuring the internal temperature reaches 165°F (74°C).
  7. Remove chicken using tongs and shred with two forks or a hand mixer.
  8. If the shredded chicken seems dry, stir in a few tablespoons of the reserved broth to keep it juicy.
  9. Use immediately or let cool and store in airtight containers for meal prep.

Notes

Cook on low heat for best tenderness and moisture. Avoid cooking longer than 6 hours to prevent stringiness. Use broth to keep chicken juicy. Shred while warm for easier shredding. If broth is too thin, thicken with cornstarch for gravy.
