Tender Honey Garlic Slow Cooker Pork Tenderloin

A juicy and flavorful pork tenderloin cooked low and slow in a honey garlic sauce, perfect for an easy and comforting dinner.

  • 1 to 1.5 pounds pork tenderloin, trimmed of excess fat
  • 1/4 cup honey (85g)
  • 1/4 cup soy sauce (60ml), preferably low sodium
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil (30ml), optional for browning
  • 1 tablespoon apple cider vinegar (15ml)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt, or to taste
  • Pinch of red pepper flakes, optional
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry), for thickening sauce

Instructions

  1. Trim the pork tenderloin by removing any silver skin or excess fat.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, black pepper, and red pepper flakes if using. Set aside.
  3. Optional: Heat olive oil in a skillet over medium-high heat and brown the pork tenderloin on all sides, about 2 minutes per side.
  4. Place the pork tenderloin in the slow cooker and pour the honey garlic sauce evenly over the pork, turning it a couple of times to coat well.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the pork reaches an internal temperature of 145°F (63°C) and is tender.
  6. About 15 minutes before serving, remove the pork and cover to keep warm. Mix cornstarch slurry into the sauce in the slow cooker. Switch to high and cook uncovered until sauce thickens, about 10-15 minutes.
  7. Slice the pork tenderloin and drizzle with the thickened honey garlic sauce before serving.

Notes

Browning the pork before slow cooking adds flavor but can be skipped. Use a meat thermometer to avoid overcooking. Thicken the sauce with cornstarch slurry at the end for a glossy glaze. Let pork rest 5-10 minutes before slicing. For gluten-free, substitute soy sauce with tamari or coconut aminos.
