Instructions

  1. Activate the yeast: In a large bowl, combine warm water (110°F/43°C), sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy and bubbly.
  2. Make the dough: Add flour, salt, and melted butter to the yeast mixture. Mix until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. If using a mixer, knead with dough hook for about 5 minutes.
  4. First rise: Place dough in a lightly greased bowl, cover, and let rise in a warm spot for about 45 minutes or until doubled in size.
  5. Preheat oven to 450°F (230°C). Prepare baking soda bath by boiling about 10 cups (2.4 liters) of water and carefully adding baking soda.
  6. Shape the pretzels: Punch down dough, divide into 8 pieces, roll each into 20-inch ropes, and twist into classic pretzel shapes.
  7. Boil pretzels: Lower each pretzel into the boiling baking soda bath for 30 seconds, then remove and place on lined baking sheet.
  8. Sprinkle coarse salt on pretzels while still wet from the bath.
  9. Bake pretzels for 12-15 minutes until deep golden brown, watching closely from 10 minutes to avoid burning.
  10. Prepare honey mustard dip: Whisk mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth.
  11. Serve warm pretzels with honey mustard dip.

Use water at about 110°F (43°C) to activate yeast properly. Boil pretzels one or two at a time to maintain water temperature. Brushing pretzels with melted butter after baking keeps them soft longer.
