Instructions

  1. Prep the vegetables by peeling and chopping the carrots, celery, and quartering the onion. Set aside.
  2. Pat the chuck roast dry with paper towels. Season all sides generously with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear the roast for 4-5 minutes per side until a deep brown crust forms.
