  • 1 teaspoon chipotle powder or smoked paprika
  • 810 small corn or flour tortillas
  • Lime wedges (optional)
  • Fresh cilantro (a handful, chopped)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Roast about 1 cup (150 grams) of fresh corn kernels in a skillet over medium-high heat for 5-7 minutes, stirring occasionally until golden-brown spots develop. If using frozen corn, thaw and dry it first.
  2. In a bowl, combine 2 tablespoons mayonnaise, 1 teaspoon chipotle powder or smoked paprika, a pinch of salt, and the roasted corn. Stir in ½ cup (50 grams) crumbled cotija or shredded cheese. Set aside.
  3. Heat a skillet over medium heat and add 1 pound (450 grams) ground beef. Break it up with a spatula and cook for 8-10 minutes until browned and cooked through. Season with salt and pepper.
  4. Lower heat to medium-low. Spoon the creamy corn mixture evenly over the cooked beef in the skillet. Sprinkle the remaining ½ cup (50 grams) cheese on top.
  5. Cover the skillet with a lid or foil and cook gently for 3-5 minutes until the cheese melts and the topping is warmed through. Watch closely to prevent burning.
  6. Warm tortillas one by one in a dry skillet over medium heat for about 30 seconds per side until warm and pliable.
  7. Assemble tacos by spooning generous portions of the cheesy beef and corn mixture onto each tortilla. Garnish with chopped cilantro and a squeeze of lime juice if desired.
