  • 2 medium fresh jalapeños, finely diced (remove seeds for less heat)
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese (about 4 oz)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • 1 tbsp Worcestershire sauce
  • 4 sturdy burger buns, toasted
  • Optional toppings: lettuce, tomato, pickles, mayo or chipotle sauce

Instructions

  1. Prepare the filling by mixing softened cream cheese, shredded cheddar, and finely diced jalapeños in a small bowl until combined. Set aside.
  2. In a large mixing bowl, combine ground beef with garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix gently without overworking.
  3. Divide the beef into 8 equal portions (about 3 oz each). Flatten one portion into a thin patty, place about 2 tablespoons of the jalapeño cheese mixture in the center, then cover with another flattened beef portion. Seal edges tightly and gently flatten into a patty about ¾ inch thick. Repeat for all patties.
  4. Preheat grill to medium-high or heat a cast-iron skillet over medium heat. Lightly oil the surface.
  5. Cook the stuffed patties for 4-5 minutes per side until a nice crust forms and cheese starts to ooze slightly. Use a meat thermometer to ensure internal temperature reaches 160°F (71°C).
  6. Toast the burger buns cut-side down on the grill or in a pan until golden and crisp.
  7. Assemble burgers by placing patties on buns and adding desired toppings. Serve immediately.

Notes

Chill patties for 15 minutes before cooking to help them hold shape and prevent cheese leakage. Do not press down on patties while cooking to retain juices. Let burgers rest 3-5 minutes after cooking for best melty cheese effect. Can bake at 375°F for 20 minutes, flipping halfway through as an alternative cooking method.
