  • 1 teaspoon fresh lemon zest
  • 1/4 teaspoon garlic powder
  • Pinch of freshly ground black pepper
  • Bacon slices, regular-cut, cut in half crosswise
  • Smoked salmon, thinly sliced into 1.5 inch (4 cm) squares
  • Chives or green onions, thinly sliced for garnish
  • Optional: dash of hot sauce for cream cheese mixture
  • Optional: finely chopped jalapeños or cayenne pepper for heat
  • Optional: finely chopped toasted walnuts or pecans folded into cream cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine softened cream cheese, fresh dill, lemon zest, garlic powder, and black pepper. Mix until smooth and well combined. Set aside.
  3. Slice smoked salmon into 1.5 inch (4 cm) bite-sized squares. Cut bacon slices in half crosswise.
  4. Take one salmon piece, spread about 1 teaspoon of the cream cheese mixture on top.
  5. Wrap a half slice of bacon around the salmon and cream cheese, securing with a toothpick if needed.
  6. Place the wrapped bites seam side down on the prepared baking sheet.
  7. Bake for 15-20 minutes until bacon is crispy and browned, flipping bites halfway through baking.
  8. Remove from oven and let cool for a few minutes. Garnish with chopped chives or green onions before serving.

Notes

Use regular-cut bacon for best crispiness. Chill cream cheese before assembling to prevent oozing. Flip bites halfway through baking for even crisping. If bacon is thick, reduce oven temperature to 375°F and bake longer. Avoid overcrowding baking sheet. Broil for 1-2 minutes at the end if bacon isn’t crispy enough. Store leftovers in airtight container refrigerated up to 2 days; reheat in oven at 350°F for 10 minutes, avoid microwaving.
