  • 1 lb (450 g) ground beef (80/20 blend, chuck and sirloin mix)
  • 12 mini slider buns (soft, slightly sweet, Hawaiian rolls recommended)
  • 6 slices sharp cheddar cheese (cut in half)
  • 1 small yellow onion, finely diced
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • Salt, to taste (about 1 tsp)
  • Freshly ground black pepper, to taste (about ½ tsp)
  • 2 tbsp (30 g) unsalted butter, melted (for toasting buns)
  • Secret Sauce:
  • ½ cup (120 ml) mayonnaise
  • 1 tbsp (15 ml) Dijon mustard
  • 2 tbsp (30 ml) sweet pickle relish
  • 1 tsp (5 ml) apple cider vinegar
  • ½ tsp (2.5 ml) smoked paprika
  • ¼ tsp (1.25 ml) garlic powder

Instructions

  1. Make the secret sauce: In a small bowl, whisk together mayonnaise, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, and garlic powder until smooth. Cover and chill in the fridge for at least 10 minutes.
  2. Prepare the beef mixture: In a large bowl, combine ground beef, finely diced onion, garlic powder, Worcestershire sauce, salt, and freshly ground black pepper. Mix gently until just combined.
  3. Shape the patties: Divide the beef mixture into 12 equal portions (about 1.3 oz or 37 g each). Shape each into a small, flat patty slightly larger than the slider buns. Press a slight dimple in the center of each patty.
  4. Cook the patties: Heat a non-stick skillet or cast iron pan over medium-high heat. Cook patties in batches for 2-3 minutes per side until browned and cooked through (internal temp 160°F/71°C). Avoid overcrowding.
  5. Toast the buns: Preheat oven broiler. Brush insides of slider buns with melted butter. Place cut-side up on a baking sheet and broil for 1-2 minutes until golden and crisp.
  6. Assemble the sliders: Spread secret sauce on bottom half of each bun. Add cooked patty, then fold half slice of cheddar cheese over the patty while hot to melt. Add optional toppings like pickles, lettuce, tomato, or onion rings. Top with bun halves.
  7. Serve immediately warm with favorite sides.

Notes

Press a dimple in the center of patties to prevent puffing. Butter-toasting buns prevents sogginess. Chill secret sauce for at least 10 minutes to blend flavors. Keep sliders warm in a 200°F oven tented with foil if needed. For gluten-free, use gluten-free buns or lettuce wraps. For vegan, use plant-based patties and dairy-free mayo and cheese.
