A quick and easy non-alcoholic summer drink combining fresh strawberries, basil, lime juice, simple syrup, and sparkling water for a refreshing and flavorful mocktail.

  • 6 large fresh strawberries, hulled and quartered
  • 68 fresh basil leaves (Genovese basil recommended)
  • Juice of 1 lime (about 2 tablespoons / 30 ml)
  • 2 tablespoons (30 ml) simple syrup
  • 1 cup (240 ml) sparkling water
  • Ice cubes
  • Optional: extra basil leaves or strawberry slices for garnish

Instructions

  1. Rinse strawberries and basil leaves thoroughly. Hull and quarter the strawberries. Juice the lime and set aside about 2 tablespoons (30 ml).
  2. In a glass or mixing jar, add the quartered strawberries and basil leaves. Using a muddler or wooden spoon, gently press and twist about 8-10 times to release juice and aroma without pulverizing.
  3. Pour in the fresh lime juice and 2 tablespoons (30 ml) of simple syrup. Stir gently to combine all the flavors. Taste and adjust sweetness if needed.
  4. Fill the glass about halfway with ice cubes, then top off with 1 cup (240 ml) of chilled sparkling water. Stir slowly once more to mix without losing the bubbles.
  5. Add a few fresh basil leaves or a slice of strawberry on the rim for garnish. Serve immediately to enjoy the freshest flavor and fizz.

Notes

Gently muddle the strawberries and basil to avoid bitterness. Use fresh ingredients for best flavor. Prepare muddled mixture up to 2 hours ahead and add sparkling water and ice just before serving to maintain fizz. Substitute simple syrup with honey or agave syrup for lower sugar. Mint can replace basil if desired.
