A bright and naturally sweet peach iced tea made with robust black tea and a homemade honey simple syrup, perfect for summer refreshment and easy entertaining.

  • 4 black tea bags (Assam or English Breakfast preferred)
  • 2 medium fresh peaches, sliced
  • ½ cup (120 ml) honey
  • 4 cups (950 ml) filtered water for tea
  • 1 cup (240 ml) filtered water for syrup
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • Ice cubes
  • Optional: fresh mint sprigs for garnish

Instructions

  1. Make the honey simple syrup: In a medium saucepan, combine ½ cup honey with 1 cup water. Heat over medium, stirring occasionally until honey dissolves. Simmer gently for 1-2 minutes without boiling vigorously. Remove from heat and let cool.
  2. Brew the black tea: Boil 4 cups of filtered water. Pour over 4 tea bags in a heatproof pitcher. Steep for 5-7 minutes depending on desired strength. Remove tea bags gently without squeezing. Allow tea to cool slightly.
  3. Prepare the peaches: While tea steeps, wash and thinly slice 2 medium peaches. Reserve a few slices for garnish if desired.
  4. Combine ingredients: Add sliced peaches and 2 tablespoons lemon juice to warm tea. Stir in ½ cup of cooled honey simple syrup. Taste and add more syrup if sweeter flavor is preferred. Chill mixture in refrigerator for at least 30 minutes.
  5. Serve: Fill glasses with ice cubes, pour peach iced tea over ice, and garnish with reserved peach slices and fresh mint sprigs if using. Enjoy!

Notes

Do not oversteep the tea to avoid bitterness. Use fresh ripe peaches for best flavor. Make the honey syrup first to ensure smooth sweetness. Chill thoroughly before serving. Adjust sweetness gradually. Optional to strain out peaches before serving for a smoother tea.
