  • 1 pound lean or regular ground turkey
  • 2 cups cooked rice (white, brown, or jasmine)
  • 3 tablespoons soy sauce (gluten-free tamari for gluten-free option)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fresh ginger, finely grated
  • 3 cloves garlic, minced
  • 2 stalks green onions, sliced thinly (separate whites and greens)
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon vegetable oil (or any neutral oil for cooking)
  • Optional veggies: shredded carrots, snap peas, or chopped bell peppers

Instructions

  1. Cook 2 cups (400g) of rice according to package instructions, about 15-20 minutes. Set aside and keep warm.
  2. Toast 1 tablespoon sesame seeds in a dry skillet over medium heat for about 2 minutes until golden and fragrant, stirring constantly. Remove and set aside.
  3. Peel and finely grate 1 tablespoon fresh ginger. Mince 3 garlic cloves. Slice 2 green onions thinly, separating whites and greens.
  4. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spatula, until browned and no longer pink, about 6-8 minutes. Season lightly with salt.
  5. Stir in grated ginger, minced garlic, and the white parts of the green onions. Sauté for 1-2 minutes until fragrant but not burnt.
  6. In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon toasted sesame oil, 1 teaspoon honey or maple syrup, 1 teaspoon rice vinegar, and 1/4 teaspoon red pepper flakes (optional).
  7. Pour the sauce over the turkey mixture. Stir well to coat evenly and cook for another 2-3 minutes, allowing the sauce to thicken slightly and cling to the meat.
  8. If using optional quick-cooking veggies like snap peas or shredded carrots, toss them in now and cook for 2-3 minutes until just tender.
  9. Assemble the bowl by scooping cooked rice into bowls, topping with the sesame ginger turkey mixture, then sprinkling with toasted sesame seeds and the green parts of the sliced green onions.

Notes

Keep a close eye when adding garlic and ginger to avoid burning. Splash a tablespoon of water or broth if pan dries out. Use pre-cooked or leftover rice to speed up cooking. Toast sesame seeds carefully to avoid burning. Fresh ginger is preferred for best flavor. Adjust sweetness and acidity to taste.
