Quick Fluffy Sourdough Focaccia Recipe with Rosemary and Sea Salt

A quick and easy sourdough focaccia with a fluffy interior, crackly crust, fresh rosemary, and sea salt. Perfect for snacks, dinners, or gatherings.

  • 100g (½ cup) active sourdough starter
  • 350g (2 ¾ cups) all-purpose flour
  • 275ml (1 ⅛ cups) warm water (about 80°F / 27°C)
  • 60ml (¼ cup) extra virgin olive oil, plus more for drizzling
  • 1 ½ tsp fine sea salt
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tsp coarse sea salt flakes

Instructions

  1. In a large mixing bowl, combine 100g (½ cup) active sourdough starter with 275ml (1 ⅛ cups) warm water. Stir gently until evenly distributed (about 2 minutes).
  2. Sprinkle 350g (2 ¾ cups) all-purpose flour and 1 ½ tsp fine sea salt over the liquid. Mix with hands or spatula until a shaggy, sticky dough forms (about 3 minutes).
  3. Pour in 60ml (¼ cup) olive oil and knead gently in the bowl for about 5 minutes until dough feels smoother but still soft and sticky. Adjust with water or flour if needed.
  4. Cover the bowl with a damp kitchen towel or plastic wrap and let the dough rest at room temperature for 1 hour until slightly puffed and airy.
  5. Drizzle olive oil into a 9×13 inch (23×33 cm) baking pan. Transfer dough and stretch with fingertips to fill the pan, creating dimples.
  6. Press 2 tbsp fresh chopped rosemary evenly onto the dough surface. Sprinkle about 1 tsp coarse sea salt flakes and drizzle more olive oil on top.
  7. Cover the pan loosely and let dough rise for 30-40 minutes until visibly puffed and jiggly.
  8. Preheat oven to 450°F (230°C). Bake focaccia for 18-22 minutes until golden brown and crisp on edges.
  9. Remove from oven and cool in pan for 10 minutes before slicing. Serve warm or at room temperature.

Notes

Use a lively, bubbly sourdough starter fed 4-6 hours before baking for best rise. Avoid over-kneading to keep dough airy. Press fingertips firmly to create dimples that hold olive oil and herbs. Use good quality extra virgin olive oil for flavor. Rotate pan halfway if oven runs hot. If dough doesn’t rise well, give it more time rather than rushing.
