Perfect Garlic Butter Grilled Lobster Tails

A quick and easy recipe for juicy, tender lobster tails grilled to perfection with a rich, garlicky butter glaze, perfect for elegant feasts and special occasions.

  • 4 lobster tails (68 ounces each), split lengthwise
  • 4 tablespoons unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Using kitchen shears or a sharp knife, carefully cut down the top shell of each lobster tail, stopping just before the fin. Gently pry the shell open and loosen the meat from the shell, keeping it attached at the base. Lift the meat so it rests on top of the shell.
  2. In a small bowl, combine softened butter, minced garlic, lemon juice, chopped parsley, smoked paprika, salt, and pepper. Mix well until smooth. Reserve about 1 tablespoon for serving and use 3 tablespoons for basting.
  3. Preheat the grill to medium-high heat (375-400°F). Clean and lightly oil the grates to prevent sticking.
  4. Place the lobster tails meat-side down on the grill. Grill for 4-5 minutes until grill marks appear and the meat starts to turn opaque.
  5. Flip the lobster tails so the shell side is down. Brush the meat generously with garlic butter. Grill for another 4-5 minutes, basting every 2 minutes with more garlic butter.
  6. Check doneness by ensuring the lobster meat is opaque, firm but springy, and reaches an internal temperature of 140°F (60°C).
  7. Remove from the grill, spoon reserved garlic butter over the lobster tails, sprinkle with extra parsley if desired, and let rest for a couple of minutes before serving.

Notes

Baste lobster tails with garlic butter every 2 minutes to keep them moist and flavorful. Avoid overcooking to prevent rubbery texture. If no grill is available, broil in the oven for 8-10 minutes, basting halfway through. Leftovers can be stored in the fridge for up to 2 days and reheated gently in a low oven wrapped in foil.
