  • 1 large egg, room temperature
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 tablespoons powdered sugar
  • 1 vanilla bean, split and scraped (or 1 teaspoon pure vanilla extract)

Instructions

  1. Peel and slice 4 cups of fresh peaches. Toss them with 1/3 cup sugar, 2 tablespoons cornstarch, 1 teaspoon lemon juice, 1/2 teaspoon cinnamon (if using), and 1/4 teaspoon salt. Set aside to macerate for 10-15 minutes.
  2. In a medium saucepan over medium heat, melt 1/2 cup unsalted butter. Stir frequently until the butter foams and turns golden brown with a nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  3. In a mixing bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
  4. In a separate small bowl, beat 1 large egg with 1/2 cup whole milk. Pour the milk and egg mixture into the dry ingredients, then stir in the browned butter until just combined. Batter will be soft but not runny.
  5. Preheat oven to 350°F (175°C). Pour the peach filling into an 8×8 inch oven-safe baking dish, spreading evenly.
  6. Dollop the batter over the peaches in spoonfuls, allowing some peach juices to peek through; do not spread the batter completely smooth.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling. Tent with foil halfway through if topping browns too quickly.
  8. While baking, whip 1 cup heavy cream with 2 tablespoons powdered sugar and the scraped seeds from 1 vanilla bean until soft peaks form. Keep chilled.
