Ingredients

  • White sandwich bread, crusts removed (about 12 slices)
  • Whole wheat sandwich bread, crusts removed (optional)
  • Cream cheese, softened (8 oz / 225 g)
  • Smoked salmon, finely chopped (4 oz / 115 g)
  • Fresh dill, finely chopped (2 tbsp + 1 tbsp)
  • Fresh lemon juice (1 tsp)
  • Black pepper, freshly ground (to taste)
  • Hard-boiled eggs, peeled and chopped (6 large)
  • Mayonnaise (3 tbsp)
  • Dijon mustard (1 tsp)
  • Salt and pepper (to taste)
  • Optional: smoked paprika (a pinch)
  • Greek yogurt, plain and full-fat (1/2 cup / 120 ml)
  • Cucumber, peeled, seeded, and finely diced (1 medium)
  • Fresh mint leaves, finely chopped (2 tbsp)
  • Lemon zest (1 tsp)
  • Salt (to taste)

Instructions

  1. Prepare the smoked salmon filling: In a bowl, combine softened cream cheese, chopped smoked salmon, 2 tbsp dill, lemon juice, and a pinch of black pepper. Stir until smooth and well blended. (About 5 minutes)
  2. Prepare the egg salad filling: Chop hard-boiled eggs finely, then fold in mayonnaise, Dijon mustard, 1 tbsp dill, salt, pepper, and smoked paprika if using. Mix to a creamy but not too wet consistency. Chill if time allows. (10 minutes)
  3. Prepare the cucumber-mint filling: Combine Greek yogurt with diced cucumber, chopped mint, lemon zest, and salt. Stir gently to keep cucumber crunchy. (5 minutes)
  4. Prepare the bread: Remove crusts from all bread slices. Using a serrated knife, slice each piece into 3-4 smaller rectangles or triangles depending on preferred presentation. (10 minutes)
  5. Assemble the sandwiches: Spread each filling evenly on bread slices, cover with another slice, and press lightly. Avoid overfilling to prevent slipping. (15 minutes)
  6. Cut and arrange: Trim uneven edges for a tidy look, then cut sandwiches into finger-sized pieces if not already done. Arrange on a platter alternating fillings for a colorful presentation. (10 minutes)
  7. Chill before serving: Cover the platter with plastic wrap and refrigerate for at least 20 minutes to let flavors meld and bread firm up slightly. (Optional)
