  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 3 cups (375g) all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 cup (120ml) whole milk

Instructions

  1. Take the butter and eggs out of the fridge early so they come to room temperature. Sift the flour, baking powder, and salt together into a bowl. Measure everything out before you start mixing.
  2. Using a mixer on medium speed, beat the softened butter and granulated sugar together until pale and fluffy, about 5–7 minutes.
  3. Add the eggs one at a time, mixing well after each addition until the batter looks smooth and shiny, about 3–4 minutes.
  4. Add the vanilla extract and whole milk, mixing on low speed just until combined, about 2 minutes.
  5. Switch to a spatula and gently fold in the sifted flour mixture in two batches until no streaks of flour remain, about 3–4 minutes. Be careful not to overmix.
  6. Scrape the batter into a greased 9×5-inch loaf pan and smooth the top with a spatula or the back of a spoon.
  7. Bake in a preheated 325°F (163°C) oven for 50–60 minutes, until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let the cake cool in the pan on a wire rack for 15 minutes, then remove it from the pan to cool completely before slicing.

Use room temperature ingredients for best results. Do not overmix after adding flour to avoid toughness. Bake low and slow at 325°F to prevent burning. Let cake cool completely before slicing. Leftover cake tastes better the next day. Tent with foil if top browns too fast.
