These caramel apple mummy brownies combine fudgy chocolate, tart apple slices, gooey caramel, and a white chocolate drizzle for a festive and irresistible Halloween treat.

  • 1 cup all-purpose flour (125g)
  • 1 cup granulated sugar (200g)
  • ½ cup brown sugar (110g)

  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 medium firm apples (peeled and sliced thin)
  • ¾ cup caramel sauce (180ml)
  • ½ tsp cinnamon
  • ½ cup white chocolate chips or chopped white chocolate (90g)
  • 1 tbsp heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Peel and slice the apples into thin, even strips about ¼ inch (6 mm) thick. Toss them gently with cinnamon.
  3. In a medium bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until creamy and smooth.
  4. In another bowl, sift the cocoa powder, flour, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.
  6. Spread half of the brownie batter evenly into the prepared pan.
  7. Arrange the apple slices over the batter in neat rows or slightly overlapping patterns.
  8. Drizzle about half of the caramel sauce over the apples, coating them lightly but thoroughly.
  9. Dollop the remaining brownie batter over the caramel apple layer in small strips or ribbons, gently covering the apples but leaving some gaps to mimic mummy bandages.
  10. Bake for 30-35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  11. Allow the brownies to cool completely in the pan on a wire rack.
  12. Melt the white chocolate with heavy cream in a microwave-safe bowl (heat in 20-second bursts, stirring between each) or in a double boiler until smooth and glossy.
  13. Drizzle the melted white chocolate in a zigzag pattern over the cooled brownies to mimic mummy wrappings. Let the drizzle set for about 15 minutes before slicing.
  14. Cut into squares or rectangles, ensuring each piece has apple and caramel wrapped in brownie.

If caramel sauce is thick, warm slightly before drizzling. Keep apple slices thin to avoid soggy brownies. Do not overmix batter to maintain fudgy texture.
