These muffins sneak in shredded zucchini and carrots beneath gooey chocolate chips, making a moist, tender, and nutritious snack perfect for school or anytime.

Ingredients

  • 1½ cups (190g) whole wheat flour (or all-purpose for a lighter crumb)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ⅓ cup (65g) coconut sugar (or brown sugar)
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) maple syrup
  • ⅓ cup (80ml) unsweetened applesauce
  • ⅓ cup (80ml) plain Greek yogurt or dairy-free yogurt
  • 1 tsp pure vanilla extract
  • 1 cup (120g) zucchini, finely grated and squeezed dry
  • ½ cup (60g) carrot, finely grated
  • ¾ cup (130g) semi-sweet chocolate chips

Instructions

  1. Grate the zucchini and carrot finely. Place grated zucchini in a clean kitchen towel or paper towels and squeeze out as much moisture as you can. Set veggies aside.
  2. Preheat oven to 350°F (175°C). Line your muffin tin with paper liners or grease thoroughly with non-stick spray.
  3. In a medium bowl, whisk together whole wheat flour, baking powder, baking soda, salt, cinnamon, and coconut sugar until evenly combined.
  4. In a separate bowl, beat the eggs lightly. Add maple syrup, applesauce, Greek yogurt, and vanilla extract. Mix until smooth.
  5. Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula until no large flour patches remain. The batter will be thick.
  6. Fold in the grated zucchini and carrot, then gently stir in the chocolate chips. Be careful not to overwork the batter.
  7. Spoon batter evenly into the muffin cups, filling each about ¾ full.
  8. Bake on the middle rack for 18-20 minutes until tops are golden and a toothpick inserted comes out clean or with just melted chocolate bits.
  9. Let muffins rest in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze zucchini well to avoid soggy muffins. Do not overmix batter to keep muffins tender. Use room temperature eggs and yogurt for better texture. Rotate pan halfway through baking if muffins bake unevenly. Store in airtight container at room temperature for 2-3 days or freeze up to 3 months.
