  • 2 medium sweet potatoes (about 12 ounces or 350 grams each), washed and dried
  • 2 boneless, skinless chicken breasts (about 8 ounces or 225 grams each)
  • 1 ripe avocado, peeled and pitted
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste
  • Black pepper to taste
  • Optional: red pepper flakes for heat
  • Optional: shredded cheese (mozzarella or feta) for extra richness

Instructions

  1. Preheat oven to 400°F (200°C). Prick sweet potatoes a few times with a fork, rub with 1 tablespoon olive oil, sprinkle with salt, and place on a baking sheet. Roast for 45-50 minutes until tender.
  2. Pat chicken breasts dry. Brush with remaining 1 tablespoon olive oil and season with garlic powder, smoked paprika, salt, and pepper. Let rest for 5 minutes.
  3. Heat grill or grill pan over medium-high heat. Grill chicken for 5-6 minutes per side until internal temperature reaches 165°F (74°C). Transfer to cutting board and rest for 5 minutes.
  4. In a bowl, mash avocado with lime juice, chopped cilantro, salt, and pepper. Adjust seasoning to taste.
  5. When sweet potatoes are cool enough to handle, slice lengthwise about halfway through. Fluff and mash the insides slightly with a fork.
  6. Spoon mashed avocado mixture into sweet potatoes, then top with sliced grilled chicken.
  7. Optional: sprinkle with red pepper flakes or shredded cheese, and drizzle extra lime juice if desired.
  8. Serve warm. Leftovers can be reheated gently in the oven or microwave.

Let the grilled chicken rest after cooking to keep it juicy. Use ripe but firm avocado to avoid watery filling. Roasting sweet potatoes until fork-tender is key for good texture.
