  • 2 cups (16 fl oz / 480 ml) vegetable broth
  • ½ cup (4 fl oz / 120 ml) heavy cream
  • 8 slices (about 200g) sharp cheddar cheese
  • 8 slices thick-cut white or sourdough bread
  • 4 tablespoons (¼ cup / 60g) butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prep your ingredients: finely chop the onion and mince the garlic. Open the canned tomatoes and measure the broth. Slice the cheese if using a block.
  2. Sauté the aromatics: melt 1 tablespoon of butter in a medium saucepan over medium heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the garlic and cook for another minute until fragrant but not browned.
  3. Add tomatoes and broth, then simmer: pour in the canned tomatoes with juice and vegetable broth. Break up the tomatoes with a wooden spoon. Add Italian seasoning, salt, and pepper. Bring to a gentle simmer and cook uncovered for 15 minutes.
  4. Blend and finish the soup: remove from heat and puree the soup with an immersion blender or regular blender until smooth. Stir in the heavy cream until fully incorporated. Adjust seasoning as needed.
  5. Make the grilled cheese sandwiches: heat a large skillet or griddle over medium heat. Butter one side of each bread slice generously. Place half the slices butter-side-down on the skillet, top each with 2 slices of cheddar, then cover with remaining bread slices butter-side-up. Grill 3-4 minutes per side until golden brown and cheese is melted.
