  • Sea salt flakes for sprinkling on top

Instructions

  1. Shred about 1 cup (120g) of zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible (about 5 minutes).
  2. In a medium bowl, whisk together 1 cup (125g) all-purpose flour, ⅓ cup (35g) unsweetened dark cocoa powder, ½ teaspoon baking soda, and ½ teaspoon salt. Set aside.
  3. In a large mixing bowl, beat 6 tablespoons (85g) softened unsalted butter with ¾ cup (150g) packed dark brown sugar and ¼ cup (50g) granulated sugar until light and fluffy, about 3 minutes.
  4. Beat in 1 large room temperature egg and 1 teaspoon pure vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Avoid overmixing.
  6. Gently fold in the shredded zucchini and ½ cup (90g) dark chocolate chunks or chips.
  7. Using a tablespoon or cookie scoop, drop rounded mounds onto parchment-lined baking sheets, spacing about 2 inches apart. Sprinkle each cookie lightly with sea salt flakes.
  8. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until edges look set but centers are still soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
