Fresh Watermelon Feta Skewers with Mint

A refreshing and easy summer appetizer combining juicy watermelon, salty feta, and bright mint leaves, perfect for parties and quick snacks.

Ingredients

  • 4 cups (about 600g) watermelon, cut into 1-inch cubes
  • 6 ounces (170g) firm, crumbly feta cheese, cut into cubes
  • 20 fresh mint leaves, washed and dried
  • Extra virgin olive oil, for drizzling (optional)
  • Freshly ground black pepper, to taste
  • Wooden or bamboo skewers (4-inch or longer)

Instructions

  1. Slice watermelon into roughly 1-inch cubes, removing any seeds.
  2. Cut feta cheese into cubes similar in size to the watermelon.
  3. Rinse and dry fresh mint leaves thoroughly.
  4. Assemble skewers by threading one watermelon cube, one mint leaf, one feta cube, and optionally another mint leaf, repeating until skewer is full (3-4 pieces per skewer).
  5. Place assembled skewers on a serving platter, drizzle lightly with extra virgin olive oil, and sprinkle with freshly ground black pepper.
  6. Chill skewers in the refrigerator for 15-30 minutes before serving to enhance flavors.

Notes

Use firm, crumbly feta for best results. Keep ingredients chilled until assembly. Soak wooden skewers in water if planning to grill (not recommended). Drizzle with balsamic glaze or add chili flakes for variations. Assemble skewers shortly before serving or chill for best flavor.
