A refreshing summer salad combining sweet watermelon, salty feta, and fresh mint, all tossed in a simple honey lime dressing. Perfect for light side dishes or casual get-togethers.

  • 4 cups (600g) fresh seedless watermelon, cut into 1-inch cubes
  • 1 cup (150g) crumbled feta cheese
  • 1/4 cup fresh mint leaves (about 1015 leaves), roughly chopped or torn
  • 2 tablespoons raw or wildflower honey
  • Juice of 1 large lime (about 2 tablespoons or 30ml)
  • 1 tablespoon extra virgin olive oil
  • Pinch of salt
  • Freshly cracked black pepper, to taste (optional)

Instructions

  1. Slice the watermelon into manageable chunks and then into bite-sized 1-inch cubes. Remove any seeds if present.
  2. Rinse the fresh mint leaves under cold water and pat dry. Tear or roughly chop about 1/4 cup of leaves.
  3. In a small bowl or jar, whisk together honey, lime juice, olive oil, a pinch of salt, and freshly cracked black pepper if using until well combined and honey dissolves.
  4. In a large mixing bowl, gently toss the watermelon cubes, crumbled feta, and chopped mint with the honey lime dressing. Be careful not to mash the watermelon.
  5. Taste the salad and adjust salt or lime juice if needed.
  6. Serve immediately at room temperature or lightly chilled. If refrigerating, do so for no more than 30 minutes to avoid sogginess.

Notes

For best texture, dress the salad just before serving to avoid sogginess. Use firm block-style feta for better texture. Tear mint leaves by hand to avoid bitterness. If preparing ahead, keep dressing separate and add just before serving. Variations include swapping watermelon for cantaloupe or honeydew, adding quinoa or couscous, or topping with toasted nuts.
