  • 4 cups seedless, ripe, firm watermelon, cut into 1-inch cubes
  • 1 cup firm, small-curd feta cheese, crumbled
  • 1520 fresh mint leaves, roughly chopped or torn
  • 1 tablespoon extra virgin olive oil
  • Juice of half a lime (about 1 tablespoon)
  • Pinch of sea salt, to taste
  • Fresh ground black pepper, optional

Instructions

  1. Cut about 4 cups of seedless watermelon into 1-inch cubes, keeping them uniform to hold together well.
  2. Measure out 1 cup of firm, small-curd feta cheese and crumble it into a bowl.
  3. Wash, dry, and roughly chop 15-20 fresh mint leaves, keeping pieces a bit larger for a refreshing burst.
  4. In a small bowl, whisk together 1 tablespoon extra virgin olive oil, juice of half a lime, a pinch of sea salt, and optional black pepper.
  5. Gently toss the watermelon cubes, crumbled feta, and chopped mint in a medium bowl using a spoon or salad tongs.
  6. Pour the dressing over and stir gently to coat without breaking down the watermelon.
  7. Chill the salad bites in the fridge for 10-15 minutes if possible to let flavors meld and keep mint crisp.
  8. Serve chilled or at room temperature, scooped or skewered into bite-size servings.

Notes

Add mint just before serving to keep it fresh and vibrant. Use firm, small-curd feta to avoid overpowering saltiness. Drain excess watermelon juice if very juicy to prevent sogginess. Lime juice can be substituted with lemon juice. For dairy-free, use crumbled firm tofu or plant-based cheese alternatives.
