A refreshingly natural and lightly sweetened summer drink combining fresh watermelon, cucumber, and lime juice for effortless hydration.

  • 4 cups (600g) ripe watermelon, cubed and seeds removed
  • 1 large English cucumber (about 8 inches / 20 cm), peeled and roughly chopped
  • Juice of 2 medium limes (about 3 tablespoons / 45 ml), freshly squeezed
  • 1 to 2 tablespoons (1530 ml) honey, agave syrup, or simple syrup, adjusted to taste
  • 2 cups (475 ml) cold water
  • Mint leaves (optional, for garnish or blending)

Instructions

  1. Prepare the Ingredients (5 minutes): Wash and peel the cucumber, then chop it roughly. Cube the watermelon into bite-sized pieces, removing seeds. Squeeze fresh lime juice last to keep it bright and fresh.
  2. Blend the Base (3-4 minutes): Add watermelon cubes and chopped cucumber to the blender. Pour in lime juice and sweetener. Blend on high until smooth and creamy.
  3. Add Water and Adjust (1-2 minutes): Pour in cold water and blend briefly to combine and lighten the drink.
  4. Strain (optional, 2-3 minutes): Pour the blended mixture through a fine mesh strainer into a pitcher if a smoother texture is desired, pressing gently to extract liquid. Otherwise, leave pulp for texture.
  5. Chill and Serve (at least 30 minutes): Refrigerate for at least 30 minutes before serving. Serve over ice cubes and garnish with cucumber wheel or mint if desired.

Notes

Use ripe watermelon for natural sweetness. Peel cucumber to avoid bitterness. Blend just until smooth to avoid frothiness. Adjust sweetness after blending. Chill thoroughly for best flavor. Can prepare up to 2 days ahead and store refrigerated. Optional garnishes include mint or cucumber wheels. For a vegan option, use agave syrup instead of honey.
