Ingredients

  • Cucumber, sliced into rounds
  • Cherry tomatoes, halved
  • Radishes, thinly sliced
  • Sweet bell peppers, cut into strips
  • Carrot sticks
  • Classic hummus
  • Whipped feta dip or tzatziki
  • Mutabbal or baba ganoush (optional)
  • Feta cheese, crumbled
  • Manchego or halloumi, sliced
  • Soft goat cheese (optional)
  • Mixed marinated olives (green, Kalamata, or Castelvetrano)
  • Pickled vegetables like pepperoncini or pickled red onions
  • Crusty baguette or pita bread, sliced
  • Whole grain crackers or lavash
  • Fresh herbs: parsley, mint, or oregano
  • Toasted pine nuts or pistachios
  • Fresh lemon wedges
  • Extra virgin olive oil

Instructions

  1. Wash and dry all fresh produce thoroughly. Slice cucumbers into thin rounds, halve cherry tomatoes, thinly slice radishes, and cut bell peppers into strips. Arrange carrot sticks neatly.
  2. If using store-bought hummus, transfer it into a bowl and drizzle with extra virgin olive oil and sprinkle paprika. For homemade dips like tzatziki or whipped feta, mix ingredients fresh and place dips in small bowls or ramekins.
  3. Crumble the feta over a small dish. Slice firm cheeses like halloumi or manchego into thin, shareable pieces. Arrange neatly on the board or in small piles.
  4. Place mixed marinated olives in a bowl, adding a few herbs if desired. Add pickled vegetables to a separate bowl or pile alongside the olives.
  5. Cut baguette or pita into slices. Warm the bread slightly in a 350°F (175°C) oven for about 5 minutes if desired. Arrange crackers on the board for variety.
  6. Start by placing the bowls of dips, olives, and pickles spaced evenly on the board. Fill in gaps with piles of sliced vegetables, cheeses, and bread. Scatter toasted pine nuts or pistachios and fresh herbs across the board. Tuck lemon wedges in for easy squeezing.
  7. Drizzle a little extra virgin olive oil over the cheeses and vegetables for a fresh shine and flavor boost.

Notes

Prep vegetables just before serving to maintain crispness. Warm bread slightly to enhance flavor. Arrange items in small groups and varying heights for visual appeal. Taste dips before adding salt due to salty cheeses and olives. Substitute gluten-free crackers or omit bread for gluten-free diet. Vegan variations can replace cheeses with marinated tofu or roasted artichokes and use dairy-free hummus.
