  • Wooden or metal skewers (soaked if wooden)

Instructions

  1. Prepare the marinade by combining olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, thyme, salt, black pepper, and red pepper flakes (if using) in a medium bowl. Whisk until well blended.
  2. Add the peeled and deveined shrimp to the marinade. Toss gently to coat evenly. Cover and refrigerate for 15 to 20 minutes.
  3. Preheat your grill to medium-high heat (about 375-400°F). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Remove shrimp from marinade, letting excess drip off. Thread 4 to 5 shrimp per skewer, piercing through the thickest part.
  5. Place skewers on the grill and cook for 2 to 3 minutes per side, flipping once, until shrimp are opaque pink with slight grill marks and firm to the touch.
  6. While grilling, brush shrimp with reserved marinade or freshly whisked herb oil to keep them moist and flavorful.
  7. Remove skewers from grill and let rest for 2 minutes. Serve immediately with extra lemon wedges and fresh herbs sprinkled on top.
