A light and creamy chicken salad made with Greek yogurt, fresh herbs, and crunchy veggies, served in soft mini pita pockets. Perfect for a quick lunch, picnic, or party snack.

  • 2 cups (about 300g) cooked chicken breast, shredded or chopped
  • ½ cup (120ml) plain Greek yogurt, full-fat or 2%
  • 2 medium celery stalks, finely chopped
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon freshly squeezed lemon juice
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 810 mini pita pockets
  • Optional add-ins: chopped cucumber, sliced cherry tomatoes, toasted pine nuts

Instructions

  1. If not using pre-cooked chicken, poach two medium chicken breasts in simmering water for about 15 minutes until cooked through. Let cool, then shred into bite-sized pieces.
  2. Finely dice the celery stalks and thinly slice the green onions. Chop fresh dill until you have about 2 tablespoons.
  3. In a medium bowl, combine ½ cup plain Greek yogurt, 1 tablespoon freshly squeezed lemon juice, ½ teaspoon garlic powder, salt, and black pepper to taste. Stir well to blend the flavors evenly.
  4. Add the shredded chicken, chopped celery, green onions, and dill to the bowl with the yogurt dressing. Mix gently but thoroughly to coat the chicken evenly without mashing it.
  5. Taste the chicken salad and add more salt, pepper, or lemon juice if needed.
  6. Carefully slice each mini pita in half to create pockets. Warm them slightly in the oven or toaster for about 3 minutes at 350°F (175°C) if desired.
  7. Spoon a generous amount of the chicken salad into each mini pita pocket. Add optional sliced cucumber or cherry tomato if desired. Serve immediately.

Notes

Use room temperature chicken for better mixing. Gently fold ingredients to avoid mushy salad. Fresh dill and lemon juice are key for bright flavor. Warm pitas slightly to prevent tearing. Adjust thickness by adding yogurt or chicken/celery as needed. Can substitute Greek yogurt with coconut yogurt for dairy-free and use gluten-free pitas if needed.
