A crisp, creamy, and zingy summer salad featuring cucumber, tomato, avocado, and a bright lime zest dressing. Perfect as a healthy, refreshing side dish that comes together quickly.

  • 1 medium cucumber, peeled and diced (about 8 ounces / 225 grams)
  • 2 medium ripe tomatoes, chopped (about 10 ounces / 280 grams)
  • 1 large ripe avocado, diced (about 7 ounces / 200 grams)
  • 1/4 cup red onion, finely chopped (about 40 grams)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 tablespoon fresh lime juice (about 1 lime)
  • 1 teaspoon lime zest, finely grated
  • 2 tablespoons extra virgin olive oil
  • Sea salt to taste (start with 1/2 teaspoon)
  • Freshly ground black pepper to taste (start with 1/4 teaspoon)
  • Optional: chili flakes for a subtle kick

Instructions

  1. Peel and dice the cucumber. Chop the tomatoes into bite-sized pieces. Finely chop the red onion. Set aside.
  2. Dice the avocado into chunks and keep separate until ready to mix.
  3. In a mixing bowl, combine cucumber, tomatoes, and red onion. Toss gently to mix.
  4. Stir in chopped fresh cilantro if using.
  5. Add fresh lime juice and extra virgin olive oil. Season with sea salt and freshly ground black pepper. Toss gently to coat evenly.
  6. Carefully fold in the diced avocado to keep chunks intact.
  7. Sprinkle the lime zest over the top and gently toss once more to keep the zest fresh and vibrant.
  8. Taste and adjust seasoning with more lime juice, salt, pepper, or chili flakes if desired.
  9. Chill the salad in the refrigerator for 10-15 minutes before serving for best flavor, or serve immediately.

Notes

Add avocado and lime zest last to prevent browning and preserve aroma. Use firm, ripe avocados for best texture. Drain excess tomato juice if tomatoes are very juicy to avoid watery salad. Chill briefly before serving to meld flavors. Optional chili flakes add a subtle heat. Can add toasted pepitas or sunflower seeds for protein and crunch.
