Fresh Cucumber Mint Agua Fresca

A refreshing, no sugar added drink combining crisp cucumber, fresh mint, and lime juice for a light and hydrating beverage perfect for hot days.

Ingredients

  • 2 medium English cucumbers (about 14 ounces / 400 grams), peeled if waxed
  • 1012 large fresh mint leaves, bruised gently
  • Juice of 1 large lime (about 1 tablespoon / 15 ml)
  • 3 cups (720 ml) cold water
  • Ice cubes, as needed
  • Optional: pinch of sea salt
  • Optional: sparkling water instead of still water for a fizzy twist

Instructions

  1. Wash and peel the cucumbers if they’re waxed. Slice into 1-inch (2.5 cm) chunks.
  2. Add cucumber chunks and bruised mint leaves to a blender. Pulse for about 30 seconds until well pureed but still textured.
  3. Pour the blended mixture through a fine mesh strainer or cheesecloth into a bowl or pitcher. Press with the back of a spoon to extract as much juice as possible.
  4. Stir in freshly squeezed lime juice and 3 cups (720 ml) of cold water. Adjust water or lime juice to taste.
  5. Optionally add a tiny pinch of sea salt to enhance flavors.
  6. Serve over ice cubes or refrigerate for 30 minutes before serving for best flavor.
  7. For a sparkling version, replace some or all of the cold water with chilled sparkling water just before serving.

Notes

Do not over-blend to avoid bitterness from mint. Use fresh lime juice for best brightness. Store concentrate (before adding water) in fridge up to 2 days. Best consumed within 12 hours after dilution. Optional sparkling water adds fizz.
