  • 4 large flour tortillas (10-inch size)
  • 8 ounces cream cheese, softened (full-fat or light; dairy-free alternative optional)
  • 1 cup shredded carrots (about 120 g), fresh and crisp
  • 1/2 medium cucumber, thinly sliced or peeled if desired
  • 1 small red bell pepper, julienned
  • 1 cup fresh baby spinach leaves (about 30 g), loosely packed
  • 1 tablespoon fresh dill, finely chopped (optional)
  • 1 teaspoon fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. In a medium mixing bowl, combine 8 ounces of softened cream cheese with 1 teaspoon of fresh lemon juice, 1 tablespoon of finely chopped fresh dill, and a pinch of salt and black pepper. Stir until smooth and creamy. (About 5 minutes)
  2. Wash and dry all produce thoroughly. Julienne 1 small red bell pepper into thin strips about 2-3 inches long. Peel and slice half a medium cucumber into thin rounds or ribbons. Shred about 1 cup of carrots and loosely chop 1 cup of baby spinach leaves. Keep everything dry. (10 minutes)
  3. Lay one 10-inch flour tortilla flat on a clean surface. Spread a thin, even layer of the cream cheese mixture all the way to the edges using a small spatula or spoon. (2 minutes)
  4. Arrange the spinach leaves evenly over the cream cheese layer, then layer shredded carrots, cucumber slices, and red bell pepper strips evenly. (3 minutes)
  5. Roll the tortilla tightly starting at one edge like a jelly roll. Wrap tightly in plastic wrap or parchment paper and chill in the refrigerator for at least 10 minutes to set. (10 minutes chilling)
  6. Remove from fridge, unwrap carefully, and slice into 1-inch thick rounds to reveal pinwheel spirals. Arrange on a plate or pack into lunchboxes. (5 minutes)

Notes

Keep veggies dry to avoid soggy wraps. Use softened cream cheese for easier spreading. Chill wraps tightly wrapped before slicing to hold shape. Can prepare night before and slice fresh in the morning. Substitute ingredients to accommodate gluten-free or dairy-free diets.
