  • 2 cups fresh corn kernels (about 3 medium ears)
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 medium red bell pepper, finely diced
  • ½ small red onion, minced
  • 1 small jalapeño, seeded and finely chopped (optional)
  • ¼ cup fresh cilantro, chopped
  • Juice of 2 limes (about 3 tablespoons)
  • 1 tablespoon olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  1. Remove husks and silk from 3 medium ears of fresh corn. Stand each ear upright on a cutting board and slice downward to remove kernels, yielding about 2 cups.
  2. Rinse and drain one 15-ounce can of black beans thoroughly.
  3. Finely dice one medium red bell pepper and half a small red onion. Seed and finely chop one small jalapeño if using.
  4. Roughly chop ¼ cup fresh cilantro leaves.
  5. In a medium mixing bowl, combine corn kernels, black beans, diced bell pepper, red onion, jalapeño, and cilantro.
  6. In a small bowl, whisk together juice of 2 limes, 1 tablespoon olive oil, ½ teaspoon ground cumin, and ½ teaspoon salt.
  7. Pour the lime dressing over the salsa mixture and toss gently until evenly coated. Adjust salt and pepper to taste.
  8. Cover and refrigerate the salsa for at least 20 minutes before serving to allow flavors to meld.

Notes

Use fresh corn for best texture; frozen or canned corn can be used but should be drained and patted dry. Rinse canned black beans well to reduce sodium and improve flavor. Letting the salsa rest in the fridge for at least 20 minutes enhances the flavor. Add diced avocado just before serving to avoid browning. Adjust jalapeño seeds for desired heat level.
