  • 2 to 3 lbs chuck roast, trimmed and cut into large chunks
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups beef broth (preferably low sodium)
  • 1/2 cup dry red wine or extra beef broth (optional)
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 bay leaf
  • French rolls or hoagie buns
  • Provolone or Swiss cheese slices (optional)
  • Dijon mustard or horseradish sauce (optional)
  • Butter (to toast the rolls)

Instructions

  1. Season the chuck roast chunks generously with salt and pepper.
  2. Heat olive oil in a large heavy-bottomed skillet or Dutch oven over medium-high heat.
  3. Sear the meat on all sides until browned, about 3-4 minutes per side. Do this in batches if needed.
  4. Add sliced onions and garlic to the pan, stirring for 1-2 minutes until fragrant.
  5. Pour in beef broth and red wine (if using). Add Worcestershire sauce, thyme, and bay leaf.
  6. Bring to a simmer, then cover and reduce heat to low. Cook gently for about 2.5 to 3 hours, or until beef is fork-tender. (If using a slow cooker, transfer after searing and cook on low for 6-8 hours.)
  7. Remove the beef and let it rest for 5 minutes.
  8. Slice thinly against the grain or shred with forks, depending on preference.
  9. Remove bay leaf from the au jus and strain if a clearer broth is desired. Keep au jus warm.
  10. Butter the insides of French rolls and toast them in a skillet or oven until golden brown, about 5 minutes.
  11. Layer sliced beef generously on the toasted roll.
  12. Add a slice of provolone or Swiss cheese if desired, and broil for 1-2 minutes to melt the cheese.
  13. Optionally spread Dijon mustard or horseradish sauce inside the sandwich.
  14. Serve immediately with warm au jus for dipping.

Notes

Do not skip searing the beef to develop flavor. Keep au jus warm for dipping. Toast rolls with butter to prevent sogginess. Strain au jus for a smooth sauce or leave solids for texture. Leftovers store well if beef and au jus are kept separate from bread.
