  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, for frying
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Prepare the berry filling: In a small bowl, gently combine 1 cup of fresh mixed berries with 1 tablespoon of sugar and 1 teaspoon of lemon zest (if using). Set aside for about 10 minutes to macerate and release juices.
  2. Cut the bread: Using a star-shaped cookie cutter, cut out stars from each slice of brioche. You’ll get two stars per slice if you cut carefully. Save the leftover bread for another use or toast.
  3. Make the custard mixture: In a mixing bowl, whisk together 4 large eggs, 1 cup whole milk, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and 1 tablespoon sugar until well combined and slightly frothy.
  4. Assemble the stuffed stars: Take one star-shaped bread piece and spoon about 1 tablespoon of the macerated berries onto the center. Top with another star-shaped bread piece and gently press the edges together to seal slightly.
  5. Soak the stars: Dip each stuffed star in the custard mixture for about 20 seconds per side, allowing the bread to absorb the custard without falling apart.
  6. Heat the skillet: Place a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter. Once foaming, reduce heat to medium-low.
  7. Cook the stars: Place the soaked stars in the skillet and cook for 3-4 minutes on each side until golden brown and slightly crispy. Add more butter as needed for subsequent batches.
  8. Serve: Transfer the cooked stars to a plate, dust with powdered sugar, and drizzle with warm maple syrup.

Notes

Do not soak the bread too long to avoid sogginess; about 20 seconds per side is ideal. Use medium-low heat to get a golden crust without burning. Gently press edges when stuffing to prevent filling leakage. Keep cooked stars warm in a low oven if cooking in batches. For gluten-free or dairy-free versions, substitute ingredients accordingly.
