  • 2 teaspoons (5g) ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted
  • 4 ounces (113g) cream cheese, softened
  • 1 cup (120g) powdered sugar, sifted
  • 3 tablespoons (45ml) milk
  • ½ teaspoon (2.5ml) vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  2. In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula. Do not overmix; some lumps are fine. The batter should be thick but pourable.
  4. In a small bowl, mix the brown sugar, ground cinnamon, and melted butter until smooth to create the cinnamon swirl.
  5. Preheat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or oil.
  6. Pour ¼ cup of batter onto the skillet for each pancake. Immediately drizzle about 1 tablespoon of cinnamon swirl over the batter in a spiral pattern using a spoon or piping bag. Let it sit for a few seconds, then gently swirl the cinnamon into the batter with a toothpick or skewer to create a marbled effect.
  7. Cook pancakes for about 3-4 minutes until bubbles form on the surface and edges look set.
  8. Carefully flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through. Transfer to a warm plate and cover loosely with foil while cooking remaining pancakes.
  9. While pancakes cook, beat the softened cream cheese with powdered sugar, milk, and vanilla extract until smooth and creamy. Adjust milk to reach desired drizzle consistency.
  10. Stack pancakes, drizzle generously with cream cheese glaze, and serve immediately.

Notes

Do not overmix the batter to keep pancakes fluffy. Use medium-low heat to avoid burning the cinnamon swirl. If glaze is too thick, add milk a teaspoon at a time; if too runny, add more powdered sugar. Let batter rest 5 minutes before cooking for better rise. Keep cooked pancakes warm in a 200°F oven covered loosely with foil.
