A quick and easy walking taco bar featuring seasoned ground beef and customizable toppings, perfect for tailgates and casual gatherings.

  • 1 pound lean ground beef (85% lean preferred)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of ½ lime
  • Individual bags of sturdy tortilla chips (Fritos or Doritos)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded lettuce (iceberg or romaine)
  • ½ cup diced tomatoes
  • ½ cup sliced black olives
  • ¼ cup chopped green onions
  • ½ cup sour cream or Greek yogurt
  • Fresh cilantro leaves for garnish
  • Optional: sliced jalapeños or hot sauce

Instructions

  1. Prep your ingredients: chop onion, mince garlic, dice tomatoes, slice olives and green onions, shred lettuce and cheese. Arrange toppings in bowls.
  2. Heat olive oil in a large skillet over medium-high heat. Add chopped onion and sauté until translucent, about 3 minutes.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Increase heat to high and crumble in ground beef. Cook, stirring occasionally, until browned and no longer pink, about 6-8 minutes.
  5. Season the meat with chili powder, smoked paprika, ground cumin, dried oregano, salt, and pepper. Stir well and cook for 2 more minutes.
  6. Remove from heat and squeeze in juice of ½ lime.
  7. Open individual chip bags (3 to 4 ounces each). Spoon a few tablespoons of seasoned beef into each bag.
  8. Add desired toppings: shredded cheese, lettuce, tomatoes, olives, green onions, sour cream, cilantro, jalapeños, or hot sauce.
  9. Fold the top of the chip bag to contain the ingredients and serve immediately.
  10. Keep napkins or wet wipes handy for easy cleanup.

Notes

Do not overload chip bags early to avoid sogginess; keep beef and toppings separate if prepping ahead. Use sturdy chips like Fritos or Doritos for best results. Lime juice brightens the flavor. For dairy-free, substitute sour cream with coconut yogurt or avocado crema. Vegetarian options include seasoned black beans or lentils.
