A refreshing and easy-to-make non-alcoholic mocktail that balances sweet pineapple, spicy jalapeño, tangy lime, and a salted rim for a lively tropical drink.

  • 1 cup fresh pineapple, chopped (or unsweetened pineapple juice)
  • 1 small jalapeño pepper, thinly sliced (seeds optional for heat preference)
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 tablespoons agave syrup or honey
  • 1 cup sparkling water or club soda (can substitute lemon-lime soda for sweeter notes)
  • Salt for rimming the glass (coarse sea salt or kosher salt, optional chili powder)
  • Ice cubes as needed
  • Optional garnishes: lime wedges, jalapeño slices, pineapple chunks

Instructions

  1. Rub a lime wedge around the rim of your glass. Pour coarse salt (or a mix of salt and chili powder) onto a shallow plate and dip the rim to coat it evenly. Set aside to dry slightly.
  2. Place the jalapeño slices in your mixing glass or shaker. Using a muddler or wooden spoon, press gently about 5-6 times to release the oils and heat without pulverizing the pepper.
  3. Add the chopped pineapple chunks and agave syrup (or honey) to the muddled jalapeño. Muddle gently again just until the pineapple releases some juice, about 3-4 presses.
  4. Pour in the fresh lime juice. Stir or shake the mixture well to combine all the flavors, about 10 seconds.
  5. Fill the glass with ice cubes. Strain the muddled mixture over the ice to avoid pulp if preferred, then top with sparkling water or club soda. Stir gently just to incorporate.
  6. Add a lime wedge and a jalapeño slice on the rim or floating on top. Serve immediately for the best fizz and freshness.

Notes

Adjust the heat by removing jalapeño seeds or adding more slices for extra spice. Use fresh lime juice for best flavor. Chill glasses beforehand for a cooler drink. For a frozen version, blend with ice until slushy. Salt rim can be mixed with chili powder or smoked paprika for a smoky twist.
