  • 2 cups pretzels (mini twists or sticks)
  • 1 cup mixed nuts (almonds, cashews, peanuts, salted)
  • 1/4 cup honey (raw preferred)
  • 4 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional but recommended)
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. In a large bowl, gently toss together the Chex cereal, pretzels, and mixed nuts until evenly distributed.
  3. In a small saucepan over low heat, melt the unsalted butter. Stir in honey, brown sugar, vanilla extract, ground cinnamon, and sea salt. Stir gently until sugar dissolves and mixture is smooth, about 3-4 minutes. Avoid boiling vigorously.
  4. Slowly drizzle the warm glaze over the cereal mixture while stirring continuously with a wooden spoon or spatula to coat evenly, about 3-4 minutes.
  5. Spread the coated mix onto a baking sheet lined with parchment paper or a silicone mat in an even 1/2 inch thick layer.
  6. Bake for 45 minutes, stirring every 15 minutes to toast evenly and prevent clumping. Break up any large clusters gently when stirring.
  7. Cool completely on the baking sheet at room temperature for about 20 minutes to allow the mix to crisp up.
  8. Transfer the cooled snack mix to an airtight container for storage.

Notes

Keep oven temperature low and bake slowly to avoid burning the glaze. Stir every 15 minutes to prevent clumping. Cool completely on the baking sheet before storing to maintain crispness. For vegan version, substitute butter with plant-based butter and honey with maple syrup. Gluten-free options available by using gluten-free cereals and pretzels.
