  • 1 fresh pineapple, peeled, cored, and sliced into 1/2-inch thick rings or spears
  • 1/2 cup (113 g) unsalted butter, softened to room temperature
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Peel, core, and slice the fresh pineapple into 1/2-inch thick rings or spears.
  2. In a mixing bowl, combine softened unsalted butter, brown sugar, ground cinnamon, vanilla extract (if using), and a pinch of salt. Mix until smooth and creamy.
  3. Preheat the grill or grill pan to medium-high heat, about 375°F to 400°F.
  4. Spread a generous layer of cinnamon butter on one side of each pineapple slice.
  5. Place the pineapple slices buttered-side down on the grill. Grill for 2-3 minutes until grill marks appear and the butter starts to bubble and caramelize.
  6. Carefully flip the pineapple slices using tongs, spread cinnamon butter on the other side, and grill another 2-3 minutes until tender and golden.
  7. Remove from grill and serve warm immediately.

Notes

Use ripe but firm pineapple to avoid mushiness. Soften butter before mixing for easy spreading. Grill at medium heat to prevent burning the cinnamon butter. You can prepare the cinnamon butter a day ahead and refrigerate it. For a dairy-free version, substitute butter with coconut oil or vegan margarine.
