A quick and easy grilled peach Caprese salad featuring smoky caramelized peaches, creamy burrata, salty prosciutto, fresh basil, and a balsamic glaze. Perfect for light summer meals and entertaining.

  • 34 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese, fresh and creamy
  • 68 thin slices prosciutto
  • A handful fresh basil leaves, torn or whole
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • A pinch flaky sea salt
  • Freshly ground black pepper to taste
  • Optional: crushed red pepper flakes for subtle heat

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F/200°C).
  2. Rinse and dry peaches. Slice in half and remove pits. Brush cut sides lightly with olive oil.
  3. Place peaches cut side down on the grill. Cook 3-4 minutes until grill marks appear and peaches soften slightly but hold shape.
  4. Flip peaches and grill skin side for an additional 2 minutes. Watch carefully to avoid mushiness.
  5. While peaches grill, pour balsamic vinegar into a small saucepan over medium heat. Simmer, stirring occasionally, until thickened to syrupy consistency (about 5 minutes). Remove from heat and cool slightly.
  6. On a large platter, arrange grilled peach halves, torn burrata, and folded prosciutto slices. Scatter fresh basil leaves over the top.
  7. Drizzle with extra virgin olive oil and reduced balsamic glaze. Sprinkle flaky sea salt and freshly ground black pepper. Add red pepper flakes if using.
  8. Serve immediately while peaches are warm and burrata is creamy. For prep ahead, keep components separate and assemble just before serving.

Notes

Use firm but ripe peaches for best grilling results. Chill burrata for 10 minutes if too soft to handle. Reduce balsamic vinegar for a syrupy glaze or use good quality balsamic drizzle if short on time. Fold prosciutto instead of chopping for better texture and presentation. Assemble salad just before serving to keep burrata creamy and peaches warm.
