Flavorful Grilled Peach Bruschetta with Burrata and Honey Drizzle

A simple yet indulgent appetizer featuring smoky grilled peaches, creamy burrata cheese, and a sweet honey drizzle on toasted rustic bread. Perfect for entertaining or a quick, impressive snack.

  • 34 ripe peaches, halved and pitted
  • 8 ounces burrata cheese
  • 1 loaf baguette or rustic Italian bread, sliced into 1/2-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • A handful fresh basil leaves, torn or chopped
  • 1 teaspoon freshly squeezed lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 375°F / 190°C).
  2. Cut the peaches in half and remove the pits. Toss them gently in a bowl with lemon juice and a pinch of sea salt.
  3. Slice the bread into 1/2-inch thick slices. Brush both sides lightly with olive oil.
  4. Grill the bread slices for about 2 minutes per side until golden brown with grill marks. Remove and set aside.
  5. Place the peach halves cut side down on the grill. Cook for 3-4 minutes until caramelized grill marks appear and the fruit softens slightly. Flip and grill for an additional 2 minutes.
  6. Tear the grilled peaches into bite-sized pieces or leave halves whole. Spread a generous amount of burrata on each toasted bread slice, then top with grilled peaches.
  7. Drizzle honey over the bruschetta and scatter fresh basil leaves on top. Add freshly ground black pepper and a tiny pinch of sea salt.
  8. Serve immediately while warm.

Notes

Use ripe but firm peaches for best grilling results. Keep burrata cold until assembly to maintain its creamy texture. If no grill is available, use a broiler but watch peaches closely to avoid burning. Toast bread just until lightly crisp to avoid brittleness. Drizzle honey at the end to prevent burning.
