  • 1 cup Greek yogurt (full-fat)
  • 1/2 English cucumber, grated and drained
  • 2 garlic cloves, finely minced or grated
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill

  • 2 cups mixed greens (arugula, spinach, or romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and pepper, to taste

Instructions

  1. Marinate the chicken: In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add chicken thighs and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. Prepare the tzatziki: Grate the cucumber using a fine grater. Place grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. In a small bowl, combine Greek yogurt, drained cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Mix well and refrigerate until ready to serve.
  3. Make the salad: In a large bowl, combine mixed greens, cherry tomatoes, sliced red onion, Kalamata olives, and feta cheese. Drizzle with olive oil and red wine vinegar or lemon juice, season with salt and pepper, and toss gently to combine.
  4. Cook the chicken: Heat a cast iron skillet or non-stick pan over medium-high heat. Add marinated chicken thighs in a single layer (cook in batches if needed). Cook for about 5-6 minutes per side, or until internal temperature reaches 165°F (74°C). Chicken should be golden brown with slightly crisp edges.
  5. Rest and slice: Transfer chicken to a cutting board and let rest for 5 minutes. Slice into strips or bite-sized pieces.
  6. Assemble your bowl: Divide salad evenly among meal prep containers or serving bowls. Top with sliced chicken and a generous dollop of tzatziki sauce. Optionally, add extra lemon wedges or fresh herbs for garnish.

Notes

Marinate chicken at least 30 minutes for best flavor but no longer than 4 hours to avoid mushy texture. Squeeze grated cucumber thoroughly to prevent watery tzatziki. Cook chicken without crowding the pan for a nice sear. Dress salad just before serving to keep greens crisp. Use fresh herbs to enhance flavor.
