Instructions

  1. Measure and combine the dry ingredients: rolled oats, ground flaxseed (if using), chia seeds (optional), and salt in a mixing bowl. Stir to distribute evenly.
  2. Add the wet ingredients: nut butter, honey or maple syrup, and vanilla extract. Mix thoroughly with a spatula until a sticky, cohesive dough forms. Add a teaspoon of water or more honey if too dry.
  3. Gently fold in the mini vanilla sprinkles, being careful not to break them or cause color bleeding.
  4. Shape the mixture into 1-inch round balls using hands or a small cookie scoop. Place on a parchment-lined baking sheet or plate.
  5. Refrigerate the bites for at least 30 minutes to firm up and meld flavors.
