  • 1 teaspoon Dijon mustard

  • 1 small clove garlic, minced (optional)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Peel and finely mince one small shallot.
  2. In a bowl or jar, combine 3 tablespoons balsamic vinegar with 1 teaspoon Dijon mustard and whisk or shake to blend.
  3. Stir in the minced shallot and optional minced garlic.
  4. Slowly drizzle in 1/2 cup extra virgin olive oil while whisking continuously to create a smooth emulsion. Alternatively, add all oil to a jar and shake vigorously for about 30 seconds.
  5. Add 1 teaspoon honey to balance acidity if desired, then season with salt and freshly ground black pepper to taste.
  6. Whisk or shake the dressing again and taste, adjusting seasoning as needed.
  7. Let the vinaigrette rest at room temperature for 10–15 minutes before serving to allow flavors to meld.
