These Oreo truffles combine creamy cheesecake-like filling with a crunchy chocolate coating and the surprising fizz of Pop Rocks, creating a fun and unforgettable treat perfect for parties and celebrations.

  • 36 Oreos (about one standard 14.3 oz or 405g package), crushed into fine crumbs
  • 8 oz (225g) cream cheese, softened
  • 12 oz (340g) semi-sweet or dark chocolate chips or melting wafers
  • 1 to 2 small packets (about 0.1 oz or 3g each) Pop Rocks, classic cherry or watermelon flavor
  • Optional: red, white, and blue nonpareils or sugar crystals for decoration

Instructions

  1. Crush the Oreos into fine crumbs using a food processor or place in a zip-top bag and crush with a rolling pin.
  2. Transfer Oreo crumbs to a medium bowl and add softened cream cheese. Blend with an electric mixer or sturdy spoon until fully combined and smooth.
  3. Scoop tablespoon-sized portions (about 15g each) and roll into smooth balls. Place on a parchment-lined baking sheet.
  4. Chill the truffle balls in the refrigerator for at least 1 hour until firm.
  5. Melt the chocolate in a double boiler or microwave-safe bowl in 30-second intervals, stirring until smooth.
  6. Dip each chilled truffle into the melted chocolate, coating completely. Let excess drip off and place back on parchment paper or a cooling rack.
  7. Before the chocolate sets, sprinkle Pop Rocks on top of each truffle and press lightly to adhere without crushing.
  8. Optionally, add festive sprinkles or sugar crystals alongside the Pop Rocks.
  9. Chill again for 20-30 minutes until the chocolate hardens completely.
  10. Bring truffles to room temperature about 15 minutes before serving to enjoy the creamy interior and popping sensation.

Use softened cream cheese for smooth blending. Chill truffles thoroughly before dipping to avoid melting chocolate. Add Pop Rocks only after dipping to preserve popping effect. Use good quality chocolate for best results. Store truffles refrigerated and add Pop Rocks just before serving. Avoid freezing to maintain fizz.
