  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (240ml) whole milk, room temperature (or almond milk for dairy-free)
  • 2 large eggs, room temperature
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups (about 300g) fresh peaches, peeled and chopped (use frozen, thawed peaches if out of season)
  • 1/2 cup (100g) brown sugar, packed
  • 1/2 cup (60g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (56g) unsalted butter, cold and cubed
  • 1/2 cup (50g) chopped pecans or walnuts (optional)
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons whole milk or cream
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch pan or line it with parchment paper.
  2. In a medium bowl, combine 1/2 cup brown sugar, 1/2 cup flour, cinnamon, and salt. Add cold, cubed butter and mix until coarse crumbs form. Stir in nuts if using. Set aside.
  3. In a large bowl, cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together 2 cups flour, baking powder, baking soda, and salt.
  6. Add the flour mixture and milk alternately to the butter mixture, beginning and ending with flour. Mix gently until just combined.
  7. Fold in the chopped peaches gently with a spatula.
  8. Pour batter evenly into the prepared pan.
  9. Sprinkle the streusel topping evenly over the batter without pressing down.
  10. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  11. Cool the cake in the pan on a wire rack for about 20 minutes.
  12. While cooling, whisk powdered sugar, vanilla extract, and 2 tablespoons milk in a small bowl to make the glaze. Add more milk if needed for drizzling consistency.
  13. Drizzle the vanilla glaze over the warm cake.
  14. Slice and serve warm or at room temperature.

Notes

Do not overmix the batter to avoid toughness. Use cold butter for the streusel to keep it crumbly. If glaze thickens, add a few drops of milk. For a crispier streusel after cooling, warm the cake in the oven for 5 minutes before glazing. Frozen peaches should be thawed and patted dry to prevent excess moisture.
