  • 2 large boneless, skinless chicken breasts (about 1 to 1.25 pounds / 450-570g)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 3 garlic cloves, minced
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained; rehydrate if dry)
  • 1/4 cup chicken broth (60 ml), low sodium preferred
  • 1 teaspoon fresh thyme, chopped (optional)
  • 1 tablespoon butter

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and freshly ground black pepper. (About 5 minutes)
  2. Place a large skillet over medium-high heat and add the olive oil. Heat until shimmering but not smoking, about 2-3 minutes.
  3. Add the chicken breasts carefully to the skillet and sear without moving for 4-5 minutes until golden crust forms. Flip and cook the other side for another 4 minutes. (Total 8-10 minutes)
  4. Push the chicken to one side, reduce heat to medium, and add minced garlic and chopped sun-dried tomatoes. Stir gently and cook for about 1 minute until fragrant.
  5. In a small bowl, whisk together honey, Dijon mustard, and apple cider vinegar. Pour the mixture over the chicken and tomatoes, then add chicken broth. Stir to coat evenly. (1-2 minutes)
  6. Reduce heat to low, cover the skillet loosely with a lid or foil, and simmer gently for 6-8 minutes until chicken is cooked through and sauce thickens. Check internal temperature to reach 165°F (74°C).
  7. Remove the lid, add butter and fresh thyme if using. Stir gently until butter melts and sauce is glossy.
  8. Let the chicken rest in the pan off heat for a few minutes before serving.

Notes

If the sauce thickens too much, add a splash of broth or water. Adjust simmer time if chicken breasts are thicker. Butter can be omitted or replaced with dairy-free spread for dairy-free version. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Sun-dried tomatoes can be substituted with cherry tomatoes or olives. Leftovers keep well refrigerated for up to 3 days and freeze for up to 2 months.
